Green Tomato Pie
Serves 6-8
2 cups green tomatoes
1 cup sugar
2 tablespoons melted butter
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon ginger
2 tablespoons (gluten-free) flour
2 pie crusts
Slice tomatoes and soak in hot water for about 20 minutes. Drain. Combine other ingredients in a small bowl and mix in the tomatoes. Pour into pie crust and top with second crust. Bake at 450 degrees F for 30-40 minutes or until crust is brown.
